No-Bake Cheesecake

I can not believe this is my kids’ last week of school. That means the girls will be home all day. It means afternoon picnics at the park and family get togethers.

I am excited but I am not looking forward to the fact my food budget out of the water. I swear, those girls eat more in a morning than most people do all day. Maybe that is why they are growing so fast. And our family get togethers, I bring a lot of the food. All of this can add up fast and before I know it, I have spent my monthly food money in a week. So how do I manage to not worry about it?

My secret is BJs (Get a FREE 3 month trial membership). I can buy everything I need in one trip, split it up how I need it and save a ton of money. For the kids’ lunches, I can pick up deli meat at a low everyday price, pair it with some yogurt and the kids have a fast and easy lunch that they can make themselves before running out the back door to play in the yard or swim in the pool.

I can buy large containers of fruit that the kids can have as a snack for only a little more than a small container at the grocery store. As a bonus, I can find everything I need for making my broccoli salad, pasta salad, and taco dip that are my must makes for picnics.

One of my other go-to picnic recipes is no bake cheese cake. When we have no-bake cheesecake, whether it is at home or for a picnic, I always have to make more than one. Everyone loves it, and it is gone oftentimes the same day or the next day.

I like to get everything I need for my cheesecake recipe from BJs because I can get it while I am there doing my normal shopping, but also because I can save a lot of money using my BJs membership, which is less than it costs to fill up my car with gas.

Ingredients:

Graham cracker crust

I ½ cups of graham cracker crumbs

2 tablespoons of sugar

5 tablespoons of butter- melted

Filling

8 ounces of softened cream cheese

1 can of sweetened condensed milk

¼ cup of lemon juice

1 teaspoon of vanilla extract

Directions:

Beat cream cheese until it is fluffy

Slowly add in the condensed milk. Mix until incorporated.

Add in the lemon juice and vanilla extract.

Once everything is combined well, pour into crust and refrigerate for 4 hours.

This no-bake cheesecake is perfect to have on hand for guests, a tasty dessert after dinner, and it is great to take to picnics with you. You can add pie filling to the top or decorate the edges with fresh fruit. It is sure to be a hit.
